Herbed Turkey Meatballs
Makes 4 servings
1 tablespoon extra virgin olive oil
1 small yellow onion, diced
Sea salt
4 cloves garlic, minced
1 teaspoon dried thyme
2 teaspoons dried oregano
¼ teaspoon red pepper flakes
1 tablespoon tomato paste
1 egg, whisked
½ cup bread crumbs or almond meal
1 pound ground turkey
½ cup parsley leaves, chopped
1. Preheat oven to 400F.
2. Heat olive oil over medium high heat. Saute onion with a pinch of salt until translucent. Add garlic, thyme, oregano, and red pepper flakes. Remove from heat to cool.
3. In a large bowl, whisk together tomato paste, egg, bread crumbs, and ½ teaspoon salt. Gently mix in the cooled onions, ground turkey, and parsley, being careful not to overwork the meat.
4. Form meatballs about the size of a golf ball and space evenly on a parchment-lined baking sheet.
5. Bake for 15-20, or until an instant read thermometer reads 160F.
